Broccoli Soup & Cheesy Soldiers

Serves: 2
Prep time: 8 mins
Cooking time: 20 mins

Ingredients:
*400g frozen broccoli
*4 spring onions
*Olive oil
*20g mixed seeds, such as sunflower, pumpkin, linseeds, poppy
*1 large slice bread
*80g cheddar
*1 organic veg stock cube
*1 bunch flat-leaf parsley
*Extra virgin olive oil (optional)

Method:
1. Remove the shelf from the large air fryer drawer, chuck in the broccoli, then trim, roughly chop and add the spring onions, drizzle with 1tbsp of olive oil, season with sea salt and black pepper and toss well. Cook for 15 minutes at 200°C, or until the broccoli is soft, shaking the drawer occasionally.
2. Use your fingertips to press the seeds into the surface of the bread, drizzle with 1tsp oil and grate over a layer of cheese. Cook in the small drawer for 7 minutes at 180°C, or until golden and crisp, then slice.
3. Once the broccoli is soft, remove the drawer from the air fryer, grate in the remaining cheese, crumble in the stock cube, tear in most of the bunch of parsley, stalks and all, and pour over 400ml boiling kettle water.
4. Carefully blitz with a hand blender until smooth, adding an extra splash of water, if needed. Season to perfection, then gently return the drawer and cook for 5 minutes at 180°C, or until piping hot.
5. Divide between mugs or bowls, pick over the remaining parsley, and drizzle with a little extra virgin olive oil, if you like. Serve with the soldiers.

Lemon Fish, Spuds & Spinach Sauce

Serves: 2
Prep time: 10 mins
Cooking time: 22 mins

Ingredients:
*400g potatoes
*Olive oil
*20g cheddar cheese
*1tsp creamed horseradish
*2tbsp soured cream
*250g baby spinach
*1/2 bunch dill
*1 lemon
*2 x 130g chunky white fish fillets, skin off, pin-boned, from sustainable sources
*Extra virgin olive oil (optional)

Method:
1. Scrub the potatoes, chop into 1cm cubes, place in the large air-fryer drawer and toss with 1 1⁄2tbsp of olive oil and a pinch of sea salt and black pepper. Cook for 20 minutes at 200°C, or until golden, shaking halfway.
2. Place the cheese, horseradish, soured cream, half the spinach and most of the dill, stalks and all, in a blender with 50ml water. Squeeze in a quarter of the lemon juice and blitz until smooth, then season to perfection. Remove the shelf from the small drawer, then pour in the sauce and replace the shelf.
3. Season the fish fillets and place in the small drawer. Finely slice 4 lemon rounds, place on top of the fish, spritz with oil, and cook for 12 to 15 minutes at 170°C, or until the fish is just cooked through and the sauce is hot.
4. Tip the potatoes out of the large drawer and pack in the remaining spinach. Cook for 2 minutes at 200°C, or until just wilted, while you remove the fish from the small drawer so you can divide the sauce between plates. Arrange the fish, spuds and wilted spinach on top. Pick over the reserved dill and finish with a drizzle of extra virgin olive oil, if you like.

Mint Choc Chip Whoopie Pies

Makes: 8
Prep time: 10 mins, plus chilling
Cooking time: 37 mins

Ingredients:
*1 x 145g bar of mint Aero
*150g full-fat cream cheese
*85g unsalted butter
*200g self-raising flour
*100g caster sugar
*3tbsp cocoa powder
*1⁄2tsp bicarbonate of soda
*100g milk or dark chocolate chips
*2 medium free-range eggs

Method:
1. To make the filling, snap 120g of Aero into a heatproof bowl and melt in the air fryer for 3 minutes at 170°C, then stir until smooth and mix in the cream cheese. Cover and leave to firm up in the fridge for at least 1 hour.
2. Melt the butter in a heatproof bowl for 4 minutes at 170°C. In a large bowl, whisk together the flour, sugar, cocoa and bicarb, then stir through the chocolate chips. Mix in the melted butter, then the eggs, until the mixture is well combined. With wet hands, roll into 16 balls and place on a lined baking sheet, pushing them down slightly to flatten.
3. Line the air fryer shelf with greaseproof paper. Transfer 4 to 6 cookies into the drawer, making sure there’s a 1cm gap between them. Cook for 10 minutes at 170°C (12 minutes from chilled or 15 minutes from frozen) then, using the paper to help you, transfer the cookies to a wire rack to cool, and repeat.
4. Once the cookies are completely cool, sandwich them with the filling, crumbling up the leftover Aero to sprinkle into each one, before sandwiching.

Get ahead
If not cooking straight away, cover the raw cookies and keep in the fridge for up to 2 days, or the freezer for up to 3 months, ready to cook to order! Or, once cooked, keep them in an airtight container at room temperature for up to 3 days, stashing the filling in the fridge, ready to assemble.

Interactive map lays bare Britain’s unemployment crisis with 1.7MILLION adults on benefits… is your town on the list?

NEW data has laid bare Britain’s unemployment crisis – with 1.74 million adults currently on benefits.

Using figures released by the Office for National Statistics (ONS), the Sun has compiled maps showing the worst hit areas – with the number of claimants gone up by 182,000 in 12 months.

The stats, published this week but showing standings from December last year, are also 700 more than the month before.

And while employment levels increased year on year, the employment rate fell slightly, according to separate analysis.

The report adds that 9.3 million people aged 16-64 were “economically inactive”, while job vacancies remain “above pre-pandemic levels”.

The overall claimant count is also 514,000 above the count of 1.23 million in March 2020, before the Covid pandemic took effect on the labour market.

However, the Department for Work and Pensions made changes to the criteria for claiming Universal Credit in May 2024, and the ONS reported this is “likely to increase the claimant count over a six month period”.

England’s unemployment count is 1.5million, while there are 66,025 out of work in Wales, 107,417 in Scotland and 39,375 in Northern Ireland.

The region with the highest number of benefit claimants outside of London (357,490) is the North West (208,285).

But the claimant rate percentage sees the West Midlands (5.6%) is highest behind London (5.9%).

And both these areas saw the biggest annual increase in unemployment-related benefits claimants – London (14%) and West Midlands (12%).

Birmingham has the highest ratio of people on unemployment benefits at 10.8, followed by Newham (8.5), Barking and Dagenham (8.3), Bradford (8.2), Brent (7.9), Wolverhampton (7.8), Haringey (7.7), Enfield (7.6), Oldham (7.5) and. Hackney (7.5).

Ladywood in Birmingham has the most people claiming benefits overall, with 15,665, followed by nearby Perry Barr (12,800), Bradford West (9,120), Hall Green and Moseley (9,075), Brent East (8,805), Yardley (8,455), Erdington (8,395), Hodge Hill and Solihull (8,390), East Ham (8,335) and Bradford East (8,300).

Meanwhile, the constituency with the highest annual increase of claimants aged 18-24 is Shrewsbury (37%), then Hitchin (35%), and Birmingham Hall Green & Moseley (33%).

BENEFITS CHANGES

The previous government introduced broad reforms to the welfare system from May last year.

It included claimants working fewer than 18 hours a week now expected to substantially increase their job search.

The Department for Work and Pensions said the rule change would mean 180,000 Brits would have to work more.

However, it also promised it was “radically expanding” the support available to help people “on their journey off benefits”, former DFWP secretary Mel Stride said.

The changes were criticised by the likes of charity Turn2Us, which urged the Government to reconsider, arguing it would have a “drastic impact” on people with long-term health conditions.

Chancellor Rachel Reeves promised to “restore stability to our economy and begin a decade of national renewal” in her autumn budget.

The budget included apparent confirmations that the Labour government will continue with the reforms to the work capability assessment set out by the Conservatives.

Benefits are set to be uprated by just 1.7% in April – a difference of just a few pounds for most claimants.

The move up to 185lbs and the potential interesting match-ups in the stacked division, however, aren’t distracting Page from his primary goal.

The 37-year-old said: “If there are good fights to be had at middleweight, I’ll take them. But my goal is the welterweight belt.

“Middleweight doesn’t really do anything for me unless it’s an exciting fight.

“So if it’s a good fight, [the] UFC likes it, I like it and fans like it, I’ll do it.

“But the goal is to still progress and go and get that title at welterweight.”

Showing off her sensational figure, Bianca, 30, rocked a see-through white one-piece as she stood beside the rapper, 47.

Bianca wore her brunette locks tied up into a bun at the back of her head, with the stunning model rocking some large sunglasses.

From a distance, the YEEZY architect looked almost naked, with the one-piece clinging to every inch and curve of her toned body.

The jumpsuit that Bianca donned was a gray colour and in the style of a roll-neck.

The pair got hitched mere weeks after the rapper’s divorce from ex-wife Kim Kardashian was finalized.

Ye and Bianca often turn heads with their racy and NSFW displays, with the Aussie model often rocking next to nothing when stepping out with her man.

The couple have recently been traveling around the world, with them having spent a lot of time in Tokyo.

Pretty English island known for its Maldives-like beaches to get more flights this summer

MORE flights are launching to one of the UK’s prettiest islands.

Airline Skybus currently operates three flights a week from Newquay Airport to St Mary’s Airport in the Isles of Scilly in winter.

However, this is set to increase from May 12 to two every day – one in each direction – from Monday to Saturday.

And then during the peak summer season, a third lunchtime flight will be added, from July 1.

The 30 minute flight will also line up with other domestic routes to places like London and Edinburgh.

Skybus managing director Jonathan Hinkles said: “Our expansion at Cornwall Airport Newquay is great news for customers, bringing new connectivity, more seats and more travel options for those flying to and from the Isles of Scilly.”

Skybus first launched from Newquay Airport in 1992.

Last summer, a new fast ferry route from Penzance to the islands was scrapped before it ever started, with the current time takign around 2hr45.

The Isles of Scilly are owned by the Duchy of Cornwall – which is Prince William, with him and Kate Middleton often visiting in the summer.

Made up of 200 islands, only five are inhabited.

Tresco Island is where the royals are often spotted, where they take this kids George, Charlotte and Louis.

Just don’t expect to see them – a holidaymaker who told The Sun: “We hardly noticed at first as they seemed a normal family on holiday intent on keeping themselves to themselves.

The other islands are St Mary’s, Bryher, St Martin and St Agnes.

You can expect a mild climate all year round, being the warmest in the British Isles.

The islands have even been compared to some stunning long-haul destinations.

Travel website The Travel said: “If The Maldives is out of the question, consider visiting this UK archipelago that’s just as stunning.”

The islands are also home to the smallest airport in the UK, with Land’s End Airport only having 19-seat planes.

Another one of the islands is St Agnes, which has a super budget campsite if you want to stay for cheap.

Troytown Farm is the only dairy farm in Scilly and camping you can stay for just £12.50 a night.

Otherwise the island of St Mary’s has the Star Castle Hotel which dates back to the 16th century.

Jersey Airport is also getting new flights amid a £2million revamp.

And Blue Islands is launching a new route from Newcastle to the Channel Islands.

Thousands of struggling households can get £500 free energy or water bill grant

THOUSANDS of struggling households can get £500 worth of free cash to help their energy or water bill.

Cash-strapped households can get access to money through the Household Support Fund (HSF).

The aid was set up in 2021 and has since been extended by the UK government several times. 

How much you are eligible for is usually based on what benefits you already receive and your financial circumstances. 

The pot of cash is handed out by local councils and it varies from area to area.

In Worcestershire, hard up families can now apply for help worth £500.

To be eligible, you must be a resident of Worcestershire and your household must earn £31,000 or less a year.

Applicants will be asked to submit evidence of three consecutive months bank statements for each adult occupier as proof.

You will also be eligible for help if you claim any means tested benefits or you or a household member claim any of the following:

  • Attendance Allowance
  • Carers Allowance
  • Personal Independence Payment
  • Disability Living Allowance
  • Health Allowance

The amount you get depends on a number of factors such as whether or not you live with children.

For example, those in households with adults only, aged between 18 & 66 can receive up to £300 in support .

The same applies to households with one adult or a couple of pensionable age.

Those with children under the age of 18, or young adults up to the age of 21 in full time education, can receive up to £500.

Payments will be made by direct bank transfer to your energy supplier for your energy account or through an online portal for your energy supplier to credit your energy account.

Those with pre-payment meters will receive vouchers that can be used via the Post Office. Vouchers cannot be redeemed for cash.

WHAT IF I DON’T LIVE IN WORCESTERSHIRE?

What you can get depends on where you live and what support is available.

Each local council receives a portion of the £421million fund, which is then distributed to residents based on need.

Some councils may provide direct cash payments, while others issue vouchers to help cover essentials like energy or food.

How the money is distributed will vary, so it’s important to check with your local authority.

For example, St Helens Borough Council in Merseyside is offering support with essential bills.

Low-income families can apply for support with fuel, food and other living expenses, including utility debts, as well as help with the cost of purchasing furniture or white goods.

Direct payments of £200, or £300 for over 80s, will also be made to pensioners who are not eligible for this year’s winter fuel payment, but receive Housing Benefit or a Council Tax reduction.

Milton Keynes City Council is among those offering energy vouchers to struggling households.

The council said it will assess applicants on a “case by case” basis, but people who are just missing out on the winter fuel payment will receive help worth up to £300.

Coventry Council is also offering energy grants of up to £120 for single people or childless couples, and £160 for families.

Meanwhile Medway Council is also providing help. It will give electronic energy cards to the value of £100 to those in demonstrable hardship, with less than £500 in their bank accounts.

HOW TO KNOW IF YOU QUALIFY

Every council will receive funding from the HSF, so if you’re worried about making ends meet, check your local authority’s website for further details.

Financial support available to struggling households varies from council to council, so it is worth checking what schemes your local council offers to ensure you get all the support you need. 

The benefits you already receive will not be impacted by applying for the HSF. 

And, you do not necessarily need to receive benefits in the first place to get vouchers or funds from the HSF.
